Ingredients

24 brussel sprouts

1 small onion thinly sliced

2 large cloves of garlic minced

2 t of chipotle adobo sauce

3 t of honey

4 strips of bacon chopped.

Penne or other pasta

1/4 cup of pasta water

Preparation

Cook penne and reserve 1/4 cup of pasta water

Microwave brussel sprouts for 3 minutes to pre-cook. Set aside.

Microwave bacon, chop up bacon and set aside.

Saute onion and garlic on low for 5 minutes.

Add brussel sprouts and turn to medium high. Saute until brussel sprouts start to brown.

Remove from heat and stir in honey, chipotle in adobo and bacon. Add 1/4 cup of pasta water, reheat until reduced and sauce thickens.

Serve over penne.

Optional additions. Goat cheese or grated parmesan.
