Ingredients

2 tbsp dry sherry

1 tbsp soy sauce

1 cup lean pork, cut into 1 cm cubes

SAUCE

2 tbsp oil

1 green pepper, chopped

1 onion, chopped

1 tsp finely chopped green ginger (opt)

1 carrot, cooked and chopped

3/4 cup pineapple pieces

2 tbsp sugar

1 tbsp soy sauce

1 tbsp white vinegar

1 tbsp tomato sauce

1 tbsp dry sherry

2 tbsp cornflour, blended with 1/2 cup water.

1 tbsp plain flour

1 tbsp corn flour

Oil for frying

Preparation

Place sherry, soy sauce and pork in a bowl. Stir and allow to stand for 15 minutes.

Sauce: Heat oil and fry pepper and onion for 2 min. Add ginger, carrot, pineapple, sugar, soy and tomato sauce, vinegar and sherry. Bring mixture to a boil, stir in blended cornflour and cook for one minute. Toss pork in combined flours. heat oil in a saucepan and fry pork untilo golden brown. drain well on absorbant paper. Combine pork and sweet and sour sauce. Use 2 tbsp of mixture as a filling for each sandwich.
