Ingredients

3 lbs sweet potatoes,peeled & cut into 2 inch thick slices

1/4 cup pure maple syrup

1/4 cup wildflower honey

2 tbs dark brown sugar

3 tbs sweet butter, melted

1/4 cup apple cider

1/8 tsp cinnamon

Sea salt & freshly ground pepper to taste

1 cup natural marshmallows

Preparation

Preheat oven to 350 degrees. Combine the maple syrup, honey,sugar & cinnamon with the melted butter. Toss the sweet potatoe slices with this mixture & seaseon to taste with S&P. Place in a lightly buttered baking dish & cover with parchment paper & foil. Bake for 30 minutes & remove the paper & foil; add marshmallows and bake for an additional 10-15 minutes until lightly browned. Be sure to serve warm!
