Ingredients

5 tsp unsalted butter

1 apple peeled and cored

2 tsp sugar

1/4 cup low fat buttermilk

1 egg beaten

1 1/2 cups flour

1 1/2 tsp baking powder

3/4 tsp baking soda

3/4 tsp salt

1/2 tsp nutmeg

1 cup creamy cottage cheese

Preparation

melt 2 tsp butter in pan and brown the apples adding 2 tsp of sugar. brown and then let cool 5 minutes melt remaining butter in microwave and whisk butter buttermilk and egg in a bowl. In another bowl combine flour baking powder baking soda salt and nutmeg Add flour mixture to milk mixture Stir in apple and 1/2 cup cottage cheese make pancakes from 1/4 cups of batter
