Ingredients

1/4 Cup Brown Sugar

2 Tbsps. Cornstarch

1/4 Cup Cider Vinegar

2 Tbsps. Soy Sauce

1 8 Oz.Can Drained Pineapple chunks

1 Pound 1/2 inch cubes of Boneless Pork

1 5 oz.Can drained and sliced Water Chestnuts

1 Cut in 1/4" strips Green Pepper, Medium

1/2 Chopped Onion

Preparation

Combine sugar and cornstarch in a 1-1/2 to 2 quart casserole. Stir in vinegar, soy sauce and pineapple juice (reserved from can) Add pork, cover, Microwave at HIGH 2 minutes. Reduce power to medium and microwave 10 to 15 minutes, or until pork is no longer pink in center, stirring once or twice. Add water chestnuts, green pepper and onion. Cover and microwave 4 to 6 minutes, until pepper is tender-crisp, stirring once during the cooking. Mix in pineapple chunks; serve over rice or fried noodles.
