Ingredients

3 small Kirby cucumbers or 1 regular cucumber (about 12 oz.)

3 scallions

1/4 cup white vinegar

1/4 cup water

1-2 tablespoons sugar

Preparation

  1. Wash Kirbys or peel regular cucumber. Trim and slice thinly, and slice scallions the same way.
  2. Mix vinegar, water and sugar in serving bowl, and stir in cucumber slices and scallions.
