Ingredients

1 cup sugar

1 1/2 cup pineapple juice

2/3 cup apple cider vinegar

2 T soy sauce

1 1/3 t ground ginger

1 cube chicken bullion

2 T corn starch

20 oz can pineapple

1 green pepper

1 egg

1 lb chicken

1/2 cup flour

Preparation

To make chicken: Cut chicken into 1 inch cubes. Dip into beaten egg and place in bag with flour. Shake. Fry in large pan until done and crispy. To make sauce: In medium sauce pan, combine sugar, pineapple juice, vinegar, soy sauce, ginger, bullion cube. Mix corn starch with small amount of water and stir in slowly to pan. Boil for 5 to 10 minutes stirring frequently.

When sauce and chicken is done, combine chicken and sauce in one pan and add pineapple and green pepper. Serve over rice.
