Ingredients

2 large chicken

breast(leave skin

on or off)(optional

1 tablespoon Bertolli

extra light olive

oil

1/2 teaspoon salt

1 twist of whole

peppercorn or 1/2

teaspoon black

pepper sprinkle on

chicken

Preparation

Let chicken saute in frying pan until light brown. Finish cooking chicken in oven at 350 degrees for 20 or 25 minutes. Steam fresh baby spinach. Serve chicken over spinach or on the side. FOR THE SAUCE: Grill or carmelize 2 peaches, 2 pears and 2 plums. Put in 1 tablespoon of sweet pickes. Drizzle with olive oil. Cook until slightly tender. Fruits should be a little crunchy. Put sauce on the side. Garnish with very thin slices of red onion.
