Ingredients
2 Tbs. Peanut or salad oil
3/4 Lb. Shelled Shrimp
1 Cut in 1" cubes Green Pepper
1 Cut in 1" cubes Red Pepper
2 Medium peeled Onions, cut in 8 wedges
2 Cups Pineapple Chunks
1/2 Jar Sweet/Sour Sauce
Preparation
Heat oil on high; add shrimp and stir-fry until just pink throughout about one minute. Remove from skillet. Add peppers and onions to skillet. Stir-fry 3-4 minutes, until crisp tender. Return shrimp to skillet, along with pineapple. Pour in the cooking sauce and simmer, covered for 1 minute.
