Ingredients

1/2 lb. Salt pork

3 lg. eggs

2 cp. milk

1/2 cp. heavy cream

1 cp. flour

1/3 cp. sugar

1/2 tsp. salt

Preparation

Cut up pork into 1/2’ cubes, blanch in boiling water, drain and saute till golden brown. Whisk all other ingredients in a bowl until large bubbles form. Pour pork and fat into a 9"x13" glass baking dish and pour batter over it. Bake in a preheated 400 Degree oven for approx. 40 min. till golden brown and set.
