Ingredients
8 eggs, separated
1 cup sugar
2 cups ground walnuts
1 teaspoon cinnamon
2 1/2 cups grated carrots
Preparation
Separate the eggs. Whip egg whites to soft peaks. Beat egg yolks til frothy. Add sugar, walnuts, cinnamon, and carrots. Stir well. Fold in egg whites. Bake 325 degrees for 45 minutes.
