Ingredients
1 pound ground beef
1 egg, beaten
1/2 cup fine dry breadcrumbs
2 tablespoons finely chopped onion
3/4 teaspoon salt
1/4 teaspoon nutmeg
2 tablespoons vegetable oil
1 8oz. package cream cheese
3/4 cup milk
1/2 cup water
2 tablespoons chopped fresh parsley
1/8 teaspoon salt
1/8 teaspoon dry thyme
Preparation
Combine beef, egg, breadcrumbs, onion, 1/4 teaspoon salt and nutmeg in a large bowl. Form into 1 inch meatballs. Heat oil in a large heavy skillet and brown meatballs, covering the skillet while browning. Remove from skillet and set aside. Leave just 2 tablespoons drippings in pan. Stir cream cheese, water, parsley, 1/8 teaspoon salt and thyme into drippings. Stir over medium heat until smooth and thickened. A whisk may be needed. Return meatballs to pan to serve.
