Ingredients
3 1/2 C all-purpose flour
2 C granulated sugar
2 C softened butter
1 T baking pwder
1 t baking soda
1 t vanilla
1 C sweetened flaked coconut
1 C semi sweet chocolate, melted
Preparation
Preheat oven to 350’. In a large bowl, combine first 5 ingredients. Beat at low speed until well mixed, 2-3 minutes. Stir in coconut. Divide dough in half, and shape each half into a 12x3 inch roll and wrap in waxed paper or pastic wrap. Refrigerate until firm, at least 1 hour.
Unwrap, and rolls into 1/4 inch slices. Place 2 inches apart on ungreased cookie sheet and bake for 10-15 minutes, until edges lightly brown.
Cool slightly and drizzle with melted chocolate. Let dry before removing.
