Ingredients
splash of olive oil
3 cloves of garlic
1 shallot
1 small yukon gold potato
2 large heads of broccoli
1 onion
3 cups of vegetable broth
juice of 1/2 lemon
salt
Preparation
saute onion, garlic and shallot with salt in olive oil. add broccoli and cubed potato to pan.
bring vegetable broth to a boil, add ingredients from saute pan. simmer, covered, until potatoes are very soft. blend. add salt, pepper & lemon juice to taste.
