Ingredients
1 head green cabbage (grated) (you can cheat and buy the bagged, if your in a hurry)
1-2 avacado’s chopped
1-2 jalapeno’s seeded and chopped (if you don’t have gloves, I use a baggie to hold the jalapeno when cutting).
2-3 roma tomatoes or fresh from your garden chopped
1 bunch green onion chopped
2 cups fresh salad shrimp
1 cup sliced almonds(toasted is best)
Dressing:
1 1/2 cups mayonaise (can be light)
3 tablespoons dijon mustard
4 tablespoons rice vinegar
2 teaspoons sugar
1-2 tablespoons milk or cream
salt and lots of ground pepper
Toss 15 min before serving.
Preparation
Can prepare all ingredients and toss just before serving. You might have to adjust the dressing amount according to the size of the cabbage. Can cut the recipe in half. If you don’t have green onions, use red onion and if you have red or green peppers add them, too!
