Ingredients

1 onion

3 medium carrots

3 small beats

2 medium potatoes

1 apple

1 lemon

salt, garlic and spices

Preparation

Boil water

Meanwhile, dice onion

Put chopped onion, 3 whole peeled carrots, and 3 whole peeled small beats in boiling water

While they are cooking, slice cabbage

Peel and dice potatoes

When beats and carrots are cooked, take them out and put aside

Place cabbage and potatoes into cooking pot

While they are cooking, grate carrots beats and apple

Put all spices into that mixture (carrots + beats + apple), include chopped garlic (optional) and lemon juice. You can add a table spoon of wine if you wish to preserve the color. But generally any acid will preserve it. More lemon juice – brighter your borscht!

When potatoes are ready, put it all together and let it boil a little untill everything is more or less uniformly colored.

Eat next day. It can be consumed cold or hot. The best with freshly diced dill and parsley. Aspoon of sour cream makes it non-vegan, but can be attractive to your alien friends. Some perverts like it with mayonnaise, but I wouldn’t even comment on that one. Enjoy!
