Ingredients
1 small box instant vanilla pudding (I use sugar free - fat free variety without compromising flavor)
1 (17 ounces or so) can crushed pineapple (use juice)
1 large can (27 ounces or so) fruit cocktail (drained)
1 8-ounce tub of cool whip, thawed, (fat free works fine), and use 4 to 8 ounces of it. (I use a little over half of the containter.)
Preparation
Directions: Dump can of crushed pineapple with juice into (2.5 liter) bowl; dump in instant pudding and mix completely; dump in drained fruit cocktail and blend well; now, don’t dump… fold in cool whip thoroughly. Chill a couple of hours for flavors to set.
*optional ingredients: chopped walnuts, chopped pecans, coconut, mini-marshmallows, extra green and/or red grapes, blueberries, (do not use fresh strawberries!)
Sidenote: If you use some/all of the extra ingredients, add those before you fold in the cool whip. Also, you might then want to use more to all of the 8 ounces of cool whip to cover all ingredients well.
