Ingredients

Pastry:

1/3 cup butter 2 1/2 tbs sugar

1/3 tsp salt 1 egg yolk

1 cup flour 1/3 cup finely chopped almonds or hazel nuts.

Filling:

5 8-oz. Pkgs cream cheese

1 3/4 cup sugar

1 oz flavoring vanilla, grand marnier,

cherry kirsch, etc.

1 1/2 tsp grated orange peel

1 1/2 tsp grated lemon peel

5 eggs

2 egg yolks

1/4 cup whipping cream

You can top with glazed strawberries or the following:

1 can cherry pie filling, whipped cream, Maraschino cherries slivered almonds.

Preparation

CrustPre-heat oven to 400. Grease a 9" spring-form pan. Cream butter, sugar and salt until fluffy. Add egg yolk and beat thoroughly. Stir in flour and nuts. Press about 1/3 of mixture into bottom of the pan. Bake about 8 minutes. Cool, butter sides of pan and press remaining mixture into sides of pan. Turn oven up to 450 and prepare filling.

Filling Blend together first 6 ingredients until smooth. Add eggs and egg yolks one at a time. Mix well after each addition. Blend in cream. Pour into prepared spring form pan. Bake at 450 for 10 minutes. Reduce oven heat to 200. Bake for 1 more hour. Turn off oven. Open oven door and put towel in door of oven. Close door. You should have about a 3 inch opening. Cool for 2-3 hours in oven. Chill in refrigerator. Top before serving. If cheesecake cracks. Don’t panic. Spread topping over cracks and nobody will no.
