1 pound ground chicken breasts
1/3 cup finely chopped onion
1/3 cup finely chopped celery
3/4 cup finely crushed corn flake crumbs
8 tablespoons olive oil
2 tablespoons fresh lemon juice
2 tablespoons fresh lime juice
1 tablespoon chopped fresh parsley
1 teaspoon grated lemon peel
1 teaspoon sea salt
3/4 teaspoon fresh cracked pepper

Lemon Vinaigrette*
Eight whole-wheat mini rolls (with sesame seeds if available)
*Lemon Vinaigrette
1/4 cup extra-virgin olive oil
2 tablespoons freshly squeezed lemon juice
1/2 teaspoon Dijon-style mustard
3/4 teaspoon fresh thyme leaves, chopped
2 clove garlic, minced
3/4 teaspoon coarse salt
Pinch freshly cracked black pepper
Preparation
Blend chicken, onion, 1/4 cup crumbs, 2 tablespoons oil, 2 tablespoon lemon juice, 2 tablespoons limejuice, lemon peel, salt, and pepper in large bowl. Form mixture into eight 1/2-inch-thick patties about 2-¾ in. diameter. Sprinkle with 1/4 cup stuffing, pressing to adhere. Turn over and repeat. For Vinaigrette:In a jar or bowl, combine olive oil, lemon juice, mustard, thyme, garlic, salt, and pepper. Shake well. Can be made ahead and stored, covered, in the refrigerator. Serve at room temperature. Shake or stir just before serving.
