Ingredients

6 oz rice vermicelli, cooked

6 tbsp rice vinegar

4 tbsp sugar

2 tbsp soy sauce

1 tbsp sake

dash of sesame oil

slices of cucumber, lemon and green onion

Optional: Top with cooked prawns, crab meat, or shrimp

Preparation

Cook rice vermicelli as per package instructions.

Combine rice vinegar, sugar, soy sauce, sake and sesame oil.

Add cooked noodles.

Keep refrigerated until serving.

Divide into 4 bowls and garnish with cucumber, lemon, and green onions (and shellfish, if desired).
