Ingredients
1 large onion (chopped)
2 TBSP. chicken fat or maragarine
4-5 lb of carrots
3 or 4 med. sized sweet potatoes or yams- cube style pieces
2 oz dried prunes (both cherry flavor & regular flavor)
2 oz dried apricots
2 oz golden raisins
honey - not sure- just coat and mix
2 oranges - juice- also grate the outer rim
2 Lemons- juice- also grate the outer rim
1 tsp. of cinnamon sugar- i think I just coat and toss
a little nutmeg
some kosher salt and I like white pepper
Preparation
Cook the sweet potatoes and carrots in water first (do not over cook. just until firm)
Drain and then saute potatoes, carrots spices, prunes, apricots, raisins in onions and margarine
Nuke it or bake before ready to serve. always better the next day because the juices soak into it……
