Ingredients

2 1/2 C sunflower seeds, unsalted, ground in small batches in a coffee grinder

1 1/2 T almond butter

1 1/2 T raw honey

1/2 t pure vanilla extract

Preparation

  1. Mix together ingredients with all but 1/2 C of the ground sunflower seeds.
  2. Form into 1 1/2" balls.
  3. Roll balls in remaining 1/2 C ground sunflower seeds to coat.
  4. If not serving immediately, store in refrigerator, separated by wax paper.
