Ingredients
¼ large jar sundried tomatoes with oil (see comment)
1 6 oz. can pitted black olives
6 coarsely chopped Roma tomatoes 6 large cloves garlic
¼ cup olive oil 2 T. Balsamic vinegar
½ lb. Feta cheese, crumbled
Several stems (about 3 or 4) fresh Rosemary, chopped fine (leaves only please)
Small bunch fresh Basil leaves (chopped fine)
Salt to taste Fresh ground pepper
Optional items:
½ cup pine nuts, chopped ½ jar pitted Kalamata olives
Preparation
Blend first six ingredients together in food processer til consistency of thick paste. Remove to bowl; add crumbled Feta & chopped herbs, season with salt & pepper and allow several hours to overnight for flavors to fully meld.
