Ingredients

3 teaspoons of butter

1 tablespoon of olive oil

2 large chicken breasts, cut into 1-2 inch strips

flour

1/4 cup mushrooms, chopped

1/8 - 1/4 cup green onion, chopped

1/8 - 1/4 cup red onion, chopped

1/2 cup of heavy whipping cream

1/2 cup of chicken broth

1/4 cup rice vinegar

1/4 - 1/3 cup of sundried tomato spread

1 - 1 1/2 tablespoons of italian seasoning

Spaghetti

Preparation

Put butter and olive oil over medium heat in a good size pan. Season the chicken breast strips with pepper and salt and dust with flour. Cook the chicken breast strips for approx. 6 minutes flipping half way through. Remove chicken breasts from heat.

Sauté mushrooms and onions in remaining butter and oil for about one minute. Add heavy whipping cream, chicken broth, rice vinegar, sundried tomato spread, and italian seasoning to pan. Bring mixture to boil and cook until the sauce thickens. Add chicken to pan and cook for 3 minutes.

Cook spaghetti and add a bit of olive oil or parmesan cheese. Serve on side or under chicken and sauce.
