Ingredients

1 Jar of Sun Dried Tomatoes

1/2 Pound of Fresh Spinach

1 Small Onion

1 Block of fresh Feta Cheese

1 Pint of Pecorino Romano Grated Cheese

1 Small Container of Ricotta Cheese

1 Box of Puff Pastry

1/2 Stick of Butter

1 Egg

1 Bunch of Fresh Parsley

Preparation

Prep: Wash and Strain Spinach, Finely Chop. Chop onion into small squares Chop sundried tomatoes into fine squares Chop Parsley Roll Puff Pastry on Counter (use flower underneath)Cut each sheet 3x3 (you should end up with 18 squares if you use both sheets

In a mixing bowl, add all ingredients, mush up with hands. Dollup mix inside squares, roll into egroll shape… Baste with butter. Should take about 25-30 minutes at 350
