Ingredients
4 garlic cloves, coarsely chopped
4 oz basil leaves, washed and dried
1/2 C parmesan cheese, grated
1/2 cup sun dried tomatoes, coarsely chopped
1/2 C pine nuts, lightly toasted
1/2 C EVOO
1/2 T balsamic vinegar
Preparation
In a food processor, combine garlic, basil, parmesan and pine nuts. Pulse several times to make a coarse, crumbly mixture. With the motor running, add olive oil and vinegar. Season with salt and pepper. The pesto should be very thick
