Ingredients
4 chicken breasts (bone in, with skin)
1/2 cup sun-dried tomatoes in oil (diced)
1 cup goat cheese
1 tbsp dried italian herbs
salt and pepper to taste
Preparation
Mix goat cheese, diced sun-dried tomatoes, and herbs together. Gently create a pocket under the skin of the chicken breasts. Divide goat cheese mixture into 4 parts. Stuff 1/4 of mixture under skin of each breast, spreading under skin. Smear the chicken breasts with any leftover cheese, as well as any leftover oil from the sun-dried tomatoes. Sprinkle with salt and pepper.
Bake at 350 degrees celcius for 40 minutes.
