Ingredients
1 can all natural black beans, drained.
1-2 ripe tomatoes, diced and drained.
1-2 ripe avocados, diced.
Fresh corn if available, otherwise use frozen - amount equal to beans.
1 small red onion, finely diced.
fresh parsley, chopped
freshly ground salt and black pepper
Italian dressing (Good Seasons is great)
Preparation
MIx all ingredients and refrigerate for at least an hour.Any ingredient can be varied according to availability and preference. Canned diced tomatoes can be used if good fresh ones aren’t available.
