Ingredients
4 zucchini thick sliced
1/2 sweet onion chopped
2 garlic cloves sliced thin
baby spinach fresh
sesame seeds to garnish (optional)
2 tablespoons Origianl Canary Island Garlic and Herb Olive Oil
Preparation
A.) Put Canary Island Garlic and Herb Olive Oil in pan and saute onions 2 minutes. Add zucchini and garlic saute 3 minutes. B.) Put fresh spinach about a large handful and 2 tbl chopped cilantro, cook till they wilt. C.) Serve over rice noodles and drizzle with more Canary island Garlic and Herb Olive Oil, and top with a sprinkle of sesame seeds.
