Ingredients
2 tablespoons butter
4 medium zucchini, sliced crosswise 1/4 inch thick
1/2 medium white onion, sliced
1 1/2 tsp. dried oregano
coarse salt and ground pepper
1/2 cup heavy cream
1 cup bread crumbs
1/2 cup grated Parmesan cheese
1 medium tomatoes, sliced thinly
1 cup sour cream
Preparation
Preheat oven to 450. In a large skillet, melt butter over medium heat. Add the squash and onion. Season with salt and pepper. Cook, stirring occasionally, until zucchini are crisp-tender, 4 to 6 minutes. Add cream, and cook until thickened, about 5 minutes. Remove skillet from heat. In a bowl, mix the bread crumbs, cheese, salt and pepper. Srpinkle with half the mixture. Place sliced tomatoes over the top. Mix the remaining bread and cheese with the sour cream and spoon over tomatoes. Bake until top is golden, 8 to 10 minutes.
