Ingredients

Orzo

Rainbow Chard

Yellow Squash

Fresh Corn

Garlic

Lemon

Salt

Pepper

Sauce (optional)

Buttermilk

Yogurt

Cider Vinegar

Salt

Pepper

Fresh sage, minced

Garlic, minced

Preparation

Cook orzo pasta and drain. Cook garlic and chard in olive oil for a minute or two. Add a splash of water and cover to cook chard for another few minutes. Add diced squash and fresh corn cut from cob. Sautee till squash is done. Stir in pasta. Season w/ salt, pepper, lemon and a bit more olive oil.

Top w/ some shredded sharp cheese and the sauce if desired. Yum!
