Ingredients
4-6 ears White sweet corn
3 fresh large tomatoes off the vine (4-5 tomatoes if small)
1 small red sweet or vidala onion
3-4 TBS mayonnaise (low fat if preferred)
Salt and pepper
Preparation
Cut cooked corn off the cob Cut fresh tomatoes in bite size chunks Chop onion
Blend all 3 with mayonnaise in large bowl, salt and pepper. Cover tightly and put in refrigerator overnight. Goes well with all grilled foods, especially fish.
Vary by adding 2-3 tablespoons of blue cheese or goat cheese, spring onions, chopped sweet red pepper, or fresh chopped spinach from the garden.
