Ingredients

3 TB olive oil

3-4 cloves of chopped garlic

6 large ripe tomatoes (very coursely chopped)

1 tsp sea salt (or more to taste)

Freshly ground black pepper

1/4 cup chopped herbs (basil, oregano, parsley, marjoram)

1/4 tsp red pepper flakes

1/4 cup grated cheese (Parmesan or a mix of Italian cheeses)

8 oz. dry pasta

Additional olive oil

Additional cheese

Preparation

Combine the oil, garlic, salt, black pepper and red pepper. Add chopped tomatoes, herbs and cheese. Allow to stand at room temperature for at least 3 hours. Taste and add additional salt, pepper and cheese if desired.

Boil pasta until al dente. Drain and toss hot pasta with tomato mixture.

Pass additional cheese at the table.
