Ingredients
4x 5oz salmon fillets
1 lemon
400gm baby new poatoes
2 x cloves crushed garlic
3tsp chopped thyme
2tsp olive oil
Preparation
Halve the new potatoes, add chopped thyme, crushed garlic, olive oil and roast until cooked.
Pan fry the salmon, skin-side down until the skin starts to crisp, then turn over to cook for at least 3 minutes. Remove from the heat and place to one side.
Top and tail the green beans and blanche in a pan of boiling, seasoned water. Once cooked, strain and add a knob of butter just to coat the beans very lightly.
To serve, place the new potatoes on the base of the plate then green beans, salmon and wedge of lemon.
