Ingredients

1 hothouse cucumber, quartered, seeded and sliced

4 plum tomatoes, quartered, seeded and sliced

2 ear of fresh corn, kernels removed

2 scallion, thinly sliced

2 tblsp. finely chopped red onion

2 tblsp. fresh lemon juice

4 tblsp. chopped fresh basil

2 tsp. olive oil

1/2 cup light sour cream

salt and pepper to taste

Preparation

Lightly salt cucumber slices and spread on double layer of paper towels. Cover with additional layer of paper towel and let moisture soak up for 10 minutes.

Combine cucumbers and all remaining ingredients together. Season with salt and pepper. Chill until ready to serve.
