Ingredients
4 slices of canadian bacon, chopped
1/2 medium red onion, diced
1 handful of small precooked shrimp, tails off and chopped
3 teaspoons of soy sauce divided in half.
3 cloves garlic, pressed or chopped
1/2 Cup of red pepper, diced
1 cup of cabbage, chopped
2/3 cup of carrots, julienned and 3" in length
2 cups of cooked rice
1/2 cup of pineapple, chopped, reserve the juice
1/2 teaspoon of ginger
1/3 cup of reserved pineapple juice
1/4 cup rice vinegar
3 teaspoons of lite soy sauce
juice of 1/2 lime or lemon
dash of tabasco sauce
pepper and salt optional and to taste
Preparation
lightly brown the canadian bacon in skillet sprayed with Pam. At the end of browning, add 1 1/2 teaspoon of lite soy sauce and garlic and onions, to mix flavors. Let ingredients cool. Prepare the rice and let it cool. Mix the ginger, pineapple juice, vinegar, remaining 1 1/2 teaspoons of lite soy sauce, tabasco sauce, and lime juice together. Salt and pepper to taste. Add the cooled rice, red pepper, shrimp, carrots and cabbage to the bacon mixture, and pour the pineapple dressing over all, and mix. Pack into little dishes and chill.
