Ingredients
1 Bag of frozen peas
1/2 lb. of sugar peas or snap peas (with string taken off)
4-6 strips of bacon (cooked crisp)
1/4 cup of pimnetos or roasted red bell pepper
4-6 scallions, minced
1/2 cup of mayo
salt
pepper
Preparation
Cook bacon until crisp.
De-string sugar peas. (These can be steamed if you prefer) Mince scallions and chop pimentos or roasted red bell peppers. In large bowl mix ingredients. Crumble bacon, salt and pepper to taste and combine. Serve or refrigerate.
