Ingredients

1 lb linguine or spaghetti (fresh or dried)

3-4 cups red and yellow

cherry tomatoes

1 cup fresh basil

1/3 cup olive oil

1/4 cup red wine vinegar

2 cloves garlic

2tbs reserved cooking water

sea salt and fresh ground pepper to taste

1/4 cup grated Parmesan cheese

Preparation

  1. Boil water and cook pasta following directions on package.

  2. In a large bowl half tomatoes, tear or chop basil, thinly slice garlic, and add all other ingredients.

  3. drain cooked spaghetti add to bowl along with reserved cooking water.

  4. serve right away or chilled sprinkled with cheese. enjoy.
