Ingredients
2 boxes rottini pasta
1 can black olives (sliced)
1 small red pepper (sliced into strips)
1 small green pepper (sliced into strips
1 package white mushrooms (sliced)
1/2 bunch scallions (chopped)
Dressing:
2/3 cup apple cider vinegar
1 3/4 cups olive oil
2 tbsp. lemon juice
1 tbsp. dijon mustard
2 cloves garlic (minced)
1 1/2 tsp. each salt & pepper
1/2 tsp. oregano
1/2 tsp. sugar
Preparation
Boil pasta to package directions. Prepare dressing. While pasta is still hot pour dressing over. Let come to room temp. and add other ingredients. Chill.
