Ingredients
1-2 tsp. olive oil
2 cloves garlic, peeled and cut into small pieces
2 lbs. fresh, peeled shrimp
1 cup fresh corn, cut off cob (2-3 ears)
1-2 fresh tomatoes, peeled, drained slightly and diced
salt and pepper to taste
1 cup (or more) of crumbled feta cheese
fresh basil, cut into fine ribbons
Preparation
In a large saute pan, heat the garlic briefly in the oil on medium heat. Add the corn and peeled shrimp; stir just until the shrimp turns pink. Turn off heat; stir in tomatoes, salt and pepper to taste. Portion in bowls and top with cheese and basil. Add another drizzle of good olive oil, if desired.
