Ingredients
3 cups romaine lettuce chopped
2 cups mixed mesculine lettuce
3/4 cup cherry tomatoes
2 kirby cuc’s sliced
3/4 cup red grapes
1/2 cup chopped pear
1/2 cup cashews
16 large shrimp (sauteed)
1/2 cup chopped cheese (i used either swiss or cheddar)
1/2 cup bean sprouts
1/2 cup onions (see above)
Preparation
Mix all ingredients in a large serving bowl - after the shrimp is cooked place on top of salad and top with sauteed onions. I serve it with italian bread & fresh mozzarella.
