Ingredients
2 medium cucumbers quartered and cut into thick slices
4 small tomatoes halved, seeded and sliced
1/2 cup red onion thinly sliced
8 ounces feta cheese crumbled
1/2 cup kalamata olives sliced (optional)
2 tbsp red wine vinegar
4 tbsp extra virgin olive oil
1 tbsp dill dried
1 tsp lemon juice
salt and ground black pepper; to taste
Preparation
- Place first four (five, if including olives) ingredients in a bowl.
- Whisk together vinegar, olive oil and lemon juice.
- Drizzle mixture over ingredients in the bowl.
- Sprinkle herbs, salt and pepper over ingredients and mixture
- Gently stir or toss together until ingredients are coated with mixture and herbs.
