Ingredients

2 medium cucumbers quartered and cut into thick slices

4 small tomatoes halved, seeded and sliced

1/2 cup red onion thinly sliced

8 ounces feta cheese crumbled

1/2 cup kalamata olives sliced (optional)

2 tbsp red wine vinegar

4 tbsp extra virgin olive oil

1 tbsp dill dried

1 tsp lemon juice

salt and ground black pepper; to taste

Preparation

  1. Place first four (five, if including olives) ingredients in a bowl.
  2. Whisk together vinegar, olive oil and lemon juice.
  3. Drizzle mixture over ingredients in the bowl.
  4. Sprinkle herbs, salt and pepper over ingredients and mixture
  5. Gently stir or toss together until ingredients are coated with mixture and herbs.
