Ingredients

2 Large Tomatoes

1 Large Cucumber

1/2 cup mayonaise

1/3 cup lemon juice

1 1/2 Tablespoons dried French tarragon or 2 Tablespoons minced fresh tarragon

Salt and Pepper to taste

Preparation

Halve the Tomatoes and slice on a diagonal into 1/2 inch wedges. Trim ends of cucumber and cut into 1/4 inch round slices. In a separate bowl combine mayo, lemon juice, tarragon, salt and pepper. Mix until smooth. Taste and adjust as necessary. Toss cucumbers and tomatoes in dressing, cover and refridgerate for one to two hours.
