Ingredients
*16 oz shelled frozen edamame (soy beans)
*1/3 head red cabbage, shredded
*24 oz jar red and yellow roasted bellpeppers in olive oil, drained
*1/4 cup soy sauce
*1/4 cup seasoned rice vinegar
*4 tab sesame oil
Preparation
Place the edamame in a microwavable bowl and cover with hot water. Heat in microwave for 4-5 min on full power until tender. Drain and rinse in cold water. Cut bellpeppers into 1/4 inch shreds and combine with edamame and cabbage. Add soy sauce, vinegar, and sesame oil and toss. Allow to marinate in the refrigerator, mixing occasionally, for at least 30 min to overnight before serving cold.
