Ingredients

4 lb chicken

2 cantaloupes

1 honeydew melon

2 c green grapes

4 stalks celery

1/3 c. honey

1 1/2 C. mayonaise

juice of 1 lemon

Preparation

Cook the chicken, chill and then cut into cubes.

Cut the melons into bite-sized pieces, or use a melon baller to cut, and chop the celery.



For the dressing, mix the mayo, honey, and lemon juice until smooth.  All the prep may be done a day in advance.  

When ready to serve, toss the chicken with the fruit and celery, and then stir in the dressing.
