Ingredients
For 4 servings:
6 to 8 cooked red beets
4 oz goat cheese
thinly sliced cucumber
arugula/mixed greens
olive oil (Extra virgin is best)
white wine vinegar
Preparation
Arrange salad greens on individual plates. Slice beets and cucumbers and place on greens. Crumble goat cheese on top. Drizzle with olive oil and vinegar.
