Ingredients

1 can red beans

1 can black beans

1 can white beans

1-1/2 lb cooked shrimp

1 bunch of cilantro - chopped

1 small bunch of parsley- chopped

roasted corn kernels from 4 ears of corn

1 small finely chopped jalapeno pepper or 1 small finely chopped habanero if you like heat

Dressing:

1/2 cup fresh lime juice

1/2 cup vegetable oil

1 tablespoon balsamic vinegar

2 large cloves of garlic

1 cup crumbled feta cheese

Preparation

Roast corn under a broiler or on a grill until charred. Cool and remove kernels from corn.

Remove shells and tails from shrimp and cut up into bite-size pieces.

Wash and drain beans and place in large bowl. Add shrimp, cilantro, parsley and hot pepper and corn. Mix well.

Make dressing. Place all ingredients in a small jar and shake well. Pour over bean mixture and toss.

Toss crumbled feta on top and serve.
