Ingredients

2 cucumbers, halved, seeded and diced

2 cups nonfat plain yogurt

1/4 cup sultanas, plumped in ouzo and water and drained

1/2 teaspoon ras el hanout

1/2 cup crumbled feta cheese, dried

1/2 cup diced red onion

3 teaspoons finely chopped fresh mint

1 teaspoon chopped fresh cilantro (reserve sprigs for garnish)

3 scallions chopped, green part only

1 jalapeño, diced

Kalamata olives, pitted (for garnish)

Green olives, pitted (for garnish)

Red onion, chunks (for garnish)

Preparation

Mix together all the ingredients and refrigerate.

To serve, fill martini glass with raita. Garnish with cilantro and olive/onion/olive skewer.
