Ingredients

1 large egg white 

1 teaspoon water 

30 fresh bay leaves 

1/4 cup superfine sugar 

Preparation

Place a wire rack on a baking sheet. Place the egg white and water in a small bowl, and whisk to combine. Using a small brush, coat bay leaf with egg white, and spoon the sugar over it. Shake off the excess sugar, and place the leaf on the rack to dry. Repeat with the remaining leaves.
