Ingredients
3 large Cubanelle peppers
1 large garlic clove, crushed
3 teaspoons apple cider vinegar
3 teaspoons lemon juice
generous pinch of salt
Preparation
Grill 3 large Cubanal peppers, until just soft, before turning brown. Let cool. Take out seeds, and some peel that’s already coming off. Prepare the marinade above. Cut the peppers into 1" strips, and immerse in the marinade for immediate use or later on. Best if served fresh or up to an hour. Can be served with slightly toasted pita bread.
